Relevant Case Study
At a national food retailer with over 100 locations, food quality isn’t negotiable. But fryers are one of the hardest pieces of equipment to keep consistent across stores. Oil is expensive, temperatures drift over time, and how fryers get used depends heavily on who is working that shift.
Open Kitchen connected the retailer’s Pitco fryers and gave real-time visibility into temperature data, oil quality indicators, and usage patterns. With centrally managed recipes, they could lock in proper fryer set points remotely, ensuring temperatures stayed correct even after filtering or maintenance.
The data revealed issues that would have stayed hidden otherwise. In one case, fryer temperatures kept drifting back to an older set point even though a new SOP was in place. Operators were reverting to familiar settings without realizing it mattered. The team caught it, retrained staff, and used Open Kitchen to prevent the drift from happening again. Oil quality tracking also improved, helping the retailer balance cost control with food quality instead of guessing when to change oil.
The result: more consistent temperatures across locations, better adherence to culinary standards, faster identification of training gaps, and improved balance between oil cost and product quality, all without adding oversight or complexity.
