Introducing Smart Features To Solstice Supreme Fryers

For many restaurants, the fryer is the cornerstone of the kitchen. This one device can handle a wide variety of dishes, including French fries, mozzarella sticks, fried chicken, and lots more. However, while the fryer has been a staple forever, it’s still relatively labor-intensive, with workers draining, filtering, refilling the oil, pulling baskets, and other duties. But, what if restaurants and foodservice operations could have a smart fryer that can handle these tasks by itself? What if these establishments can reduce labor while delivering delicious and consistent results? Pitco Solstice Fryers can do it all, so let’s look at some of the smart features they offer.

Automatic Filtration

Dirty fryer oil is a constant issue for restaurants, particularly those that deep fry various meal items like chicken or fish. As breading and food particles drop into the oil, they can burn and create an unpleasant flavor. During a lunch or dinner rush, workers can’t always drain and filter the oil to ensure high-quality results.

Thankfully, oil filtration is a built-in feature of the Solstice Fryer, all without human interaction. The machine will automatically filter out particles and crumbs to ensure consistency and flavor quality. Workers do not need to open anything or mess around with knobs or levers. Once the oil is ready for collection, the fryer dumps it into a container so an employee can pour in a fresh batch.

Automatic Oil Disposal

We have made the process of using one of the oil reclamation companies automated.  The process of dumping used oil no longer requires opening the door, simply press a button.  With Pitco’s internal oil reclamation system, a third party oil company can install their holding system and connect it directly to a Pitco fryer system. This means an operator has no spilling and no burning hazards when it comes to the disposal of used oil. Pitco’s filter pump will deliver used oil to a third party holding tank. Just another way Pitco is saving its customers money. Tie into a third party remote oil system with waste oil piping option, for use with Solstice Filter.

Automatic Oil Top Off

Even if workers wait to drain all the excess oil from items before serving them, some oil will stick no matter what. So, after a few dozen (or hundred) orders, the fryer needs a significant refill. Again, having an employee pour new oil into the machine can disrupt a meal rush, as well as lead to potential issues like cooler temps or messes from oil spills.

The best way to ensure the fryer always has the right amount is to use the automatic oil top-off feature. This way, the machine can add oil as needed throughout the day, leading to labor reduction and fewer errors. The other benefit of this feature is that it’s hard to tell how much oil will be absorbed into different products. Some dishes may take a lot while others don’t. With an automated system, workers don’t have to guess when pouring.

SOS: Smart Oil Sensor

Another significant challenge restaurants face is that it’s hard to tell when fryer oil is going bad. Since it’s not economical to use fresh oil with each batch, businesses must reuse oil until it’s no longer viable. But, since employees aren’t tasting dishes before they go out, the oil may have an unpleasant taste, and no one will know until it’s too late.

That’s where the Smart Oil Sensor (SOS) comes in. This device from Pitco is the most innovative sensor on the market, and it can notify workers when it’s time to change the oil. This notification system, paired with the other smart features, ensures that restaurants can maximize every drop of oil they use. Now, it’s rare for a batch to go to waste because of improper heating, cooking, or filtration methods.
